What kind of entry-level economist jobs are there? I'm just curious.

Having a Bachelors and Master's degree will be worth it in the end. However, with the current economy a lot of employers are taking work experience into greater consideration than before. I dont think having high ed degrees will ever work against you though. Once you are able to get an entry level position, degrees combined with work experience will put you WAY ahead of the pack.
